SOUP OF THE WEEK...

POSOLE!  It's a Mexican comfort food.  If I was naming it, I'd probably call it Pork and Corn soup.  I tried the best I could to find some of the special ingredients (dried posole, Mexican oregano) without success.  Some recipes say to use hominy if you can't find the dried posole (some kind of corn) but I made it with this dried corn I found.  The hubs garnished it with cheddar but I resisted!  Pretty good, but not sure if I'm saving this one or not...
