SOUP OF THE WEEK...

TUSCAN FARRO SOUP WITH WHITE BEANS, TOMATO, AND BASIL!

This is the Italian version of beans and rice...and Farro is a nutty rice I had never had before.  This one wasn't spicy enough for us so next time...if there is a next time...I would definitely increase the garlic and add some Italian spices.  I think we've eaten the Cajun version of beans and rice too many times so that's why it seemed bland.  I will say the flavor was better the second day, like most soups!
